1) Multi-courses often expanding just over double digits
2) Fabulous wine often spanning in age close to mine
3) A stretched belly!
Another fabulous dinner at Dave’s last night. This time he hosted some of his good friends that work or have worked at Delfina. It was nice to meet them and always a treat to help Dave cook one of his masterful menus! Here’s a little (or a lot) of what we ate. I’ve learned that by putting 3 things on one plate, Dave has attempted to mask the number of courses. I see right through his master plan
1st Course: Olives, Spicy Salami, Juniper Berry Pecorino
2nd Course: Sashi-viche (Albacore, Kanpachi, Sock Eye Salmon sashimi over avocado ceviche)
3rd Course: Stuffed calamari (stuffed with calamari, parsley, egg and all sorts of other stuff)
4th Course: S.S.S. Not to be confused with S.O.S. – Help, I can’t finish my food. Soup, Salad, and Sandwich. This was definitely Dave sneaking in 3 courses into one. Gazpacho soup, cucumber salad, and wild Artic Char open face sandwich. *This was my favorite course of the night
5th Course: Squid ink pasta in a spicy sauce topped with rosemary lemon breadcrumbs, parsley, and pine nuts
6th Course: Roasted Pork Rib Roast with Corn & Squash Succotash
7th Course: Bi-Rite Mexican Spiced Chocolate w/Peanuts and Mint Chip Ice Cream
We had a lot of spectacular wines: Sancerre, Gewurztraminer, Chardonnay, Rose, Pinot, and two dessert wines. I lost count after awhile but the hit of the party was this 1989 Rioja. This one takes the cake for the oldest white wine I’ve ever had. Dave described it as waxy…couldn’t tell if that was good or bad
